Don't feel like cooking?
Watercress makes a flavorful addition to salads;
its peppery flavor reduces the need for salad dressing!

Watercress, Melon & Pear Smoothie

1 small melon (any style), peeled chooped
2 medium-sized pears, peeled, quatered & cored
4 oz watercress

Feed all ingredients through juicer, or process in blender. For best results drink immediately.

3 cups watercress
1 onion, peeled & chopped
2 tablespoons butter
3 medium potatoes, peeled & diced
2 cans chicken broth (15oz each)
1 cup cream
1/2 cup milk
Salt & pepper to taste

In large pan cook onion & butter until brown. Add potatoes & broth and cook for 5 more minutes. Liquidise in blender, return to pan and then add cream, milk, and seasonings. Serve hot.
