You can best enjoy Lamb's Lettuce's nutritional qualities by eating it raw. When cooked, it can lose up to 50% of its folic acid content.

Tuna Salad, Nante-Style

5 oz Lamb's Lettuce (Mache)
2 cups cooked white rice, cooled
1 small can of tuna in olive oil
1 cup of tomatoes diced
1 cup cucumber diced
Vinaigrette:
1 part lemon juice
1 parts olive oil
Finely chopped chives
salt and pepper

Make the vinaigrette by combining the ingredients for the dressing in a salad bowl. flake the tuna and add it to the vinaigrette. Add the rice to the bowl. Add the Lamb's Lettuce and vegetables to the salad just before serving.

Mache and Mango Salad

5 oz Mache
1 mango
2 oranges, peeled and sectioned
12 thin slices of smoked duck breast
12 shelled walnuts
Vinaigrette:
1 tbsp walnut oil
1 tbsp grape seed oil or a neutral oil
2 tbsp balsamic vinegar

Make the vinaigrette by combining the ingredients for the dressing in a salad bowl. Cut the oranges up into skinless; cut the mango into small dices; add them to the vinaigrette. Add the Mache and the walnuts at the last minute; toss; garnish with the slices of duck breast.
