Most dishes, even if they don't list cilantro as one of the ingredients
will call for it as a garnish to add that final touch of piquancy !

Veal Chops with Cilantro and Board Beans:

4 veal chops
1 3/4 lb. fresh board beans, shelled
1 branch of fresh cilantro
2 tsp butter
Marinade:
2 tbsp oil
1 tbsp lime juice
7 branches of fresh cilantro, chopped
Salt and pepper

Make the marinade and let rest for 1-2 hours in a cool place. Blanch the beans for 2 min. in boiling water. Drain and remove the skins. Cool them covered for 5 to 6 min. in butter with 2-3 tbsp water and a little salt. Brush the veal chops eith the strained marinade. Grill gently for 4-5 min. per side, brushing from time to time so that they don't dry out. Serve the chops sprinkled with shopped cilantro, accompanied bt the beans.

Angel Hair Pasta with Cilantro

16 oz sun-dried tomatoes, drained of oil, coarsely chopped
4 tbsp oil in which they were packed
16 oz feta cheese, crumbled
2 bunches of fresh cilantro, coarsely chopped
8 oz angel hair pasta

Combine first three ingredients and set aside.
Cook pasta according to package directions and toss with the tomato, cilantro, cheese mixture.
Serve warm or cold.
Serves 4 as a main course or 8 as a side dish.
